Fish Baked in Wine (Psari Plaki)

One of my favourite dishes enjoy…. the Greek way!!!

Serves 4

2 cod fillets
100ml olive oil
1 large onion sliced
2 sticks of celery chopped
3 sping onions chopped
3 chopped fresh parsley
2- 3 tomatoes sliced
2 garlic gloves crushed
1 spoon dry oregano
2 lemons thinly sliced
150ml dry white wine
2 tbsp squeezed lemons
50 g fresh breadcrumbs
chopped fresh parsley for garnish

350F oven temperature

1.In a frying pan saute the onion about 3 min then add celery, garlic, spring onions, tomatoes and parsley.
2.In a large baking dish, arrange the fish fillets in. Sprinkle oregano and season with salt and pepper of potatoes, pepper slices, diced tomatoes and garlic and oregano. Spoon the cooked onion mixture oer the fish and scatter the slices of lemon.
3. Pour in the wine and the lemon juice and sprinkle the breadcrumbs. Bake uncovered for about 45 min until the topping is golden. Sprinkle with chopped fresh parsley.
