Rasberry Almond Cake!

If you like rasberries here is quick and easy recipe. I have found it at BBC Good food website and made it. It is very yummy!!

Ingredients

140g ground almonds
140g butter , softened
140g golden caster sugar
140g self-raising flour
2 eggs
1 tsp vanilla extract
250g raspberries
2 tbsp flaked almonds
icing sugar , to serve

1.Heat oven to 180C/160C fan/gas 4 and base-line and grease a deep 20cm loose-bottomed cake tin. Blitz the ground almonds, butter, sugar, flour, eggs and vanilla extract in a food processor until well combined.
2. Spread half the mix over the cake tin and smooth over the top. Scatter the raspberries over, then dollop the remaining cake mixture on top and roughly spread – you might find this easier to do with your fingers. Scatter with flaked almonds and bake for 50 mins until golden. Cool, remove from the tin and dust with icing sugar to serve.

Gooseberry Yoghurt fool!!

A delicious summer treat yet simple recipe to finish a perfect meal is the Gooseberry Yoghurt fool. Don’t be a fool give it a try…..it is very light and healthy!!

ingredients

450 g gooseberries, topped and tailed

75 g caster sugar

100-140 g natural Greek yogurt

roasted almonds or strawberries to serve

method

1.Place the gooseberries, sugar and a couple of tablespoons of water in a saucepan and simmer on a low heat for about 15 minutes until the gooseberries are soft.

2.When the gooseberries are cooked, put them in a sieve and let the juice run out for two minutes.

3.When the gooseberry mix is cool, fold in the Greek yogurt you can add a bit of juice for more flavour (not too
much!!).

4.Just before serving, top the gooseberry fool with anything to hand. Roasted flaked almonds or strawberries or glace cherries all look great.

 

Lemon Drizzle Cake!!

Lemon Drizzle Cake is Alex’s favourite (but we all love it 🙂 ) it is so lemony and moist!! YUM!!

Ingredients

120g butter
180g castor sugar
180g self raising flour
2 eggs
1/2 cup milk
2 lemons, zest and juice
Extra 2 tbsp castor sugar

How to make:

1.Cream butter and sugar
2.Add lemon zest, flour, eggs and milk and beat well.
3.Pour into lined loaf tin and bake for an hour at 180C.
4.When cooked mix the lemon juice with the extra sugar and pour this on the hot cake and allow to cool.

Baked Feta (Φετα ψητη στο φουρνο)

Baked feta (Φετα ψητη στον φουρνο)

Traditional greek meze! Simple and easy.

Ingredients
(1 serving)
(200g) packet of feta
Sliced tomatoes
Sliced green peppers
Sprinkle of oregano
2 to 4 tablespoons of dried crushed chillies (optional)
a drizzle of olive oil

Preparation:

Place feta square on a piece of aluminium foil large enough to wrap up cheese. Drizzle cheese with olive oil, sprinkle with oregano, and top with a tomato slice and slices of green peppers. Fold aluminium foil to create a small, sealed packet. Place in oven and heat at 200 degrees Celsius for 20 minutes. Serve hot.

Fish Baked in Wine (Psari Plaki)

One of my favourite dishes enjoy…. the Greek way!!!

Serves 4

2 cod fillets
100ml olive oil
1 large onion sliced
2 sticks of celery chopped
3 sping onions chopped
3 chopped fresh parsley
2- 3 tomatoes sliced
2 garlic gloves crushed
1 spoon dry oregano
2 lemons thinly sliced
150ml dry white wine
2 tbsp squeezed lemons
50 g fresh breadcrumbs
chopped fresh parsley for garnish

350F oven temperature

1.In a frying pan saute the onion about 3 min then add celery, garlic, spring onions, tomatoes and parsley.
2.In a large baking dish, arrange the fish fillets in. Sprinkle oregano and season with salt and pepper of potatoes, pepper slices, diced tomatoes and garlic and oregano. Spoon the cooked onion mixture oer the fish and scatter the slices of lemon.
3. Pour in the wine and the lemon juice and sprinkle the breadcrumbs. Bake uncovered for about 45 min until the topping is golden. Sprinkle with chopped fresh parsley.

Light Spicy Meatballs (Πικαντικα Κεφτεδακια)!!

Here is a recipe for those who like spicy food or a bit spicy!

500g lean minced lamb

4 galric gloves crushed

100g fresh breadcrumbs

4 tablespoons chopped flat-leaf parsley

40g grated parmesan

1 teaspoon dried chilli flakes (use only if you like chillies)

1/2 teaspoon paprika

salt and pepper

1 egg

2 x 720 ml passata

10 basil leaves

3 tablespoon olive oil

served with rice (brown or plain) or pasta

I can guarantee success!

Μηλοπιτα (Apple Pie)

Mηλοπιτα (Apple pie)

The apple pie is one of my favourite desserts and accompany me from my childhood… I make it quite often in the winter!

Ingredients

½ butter melted
walnuts
1 cup of sugar
5 peeled and sliced apples
1tbsp cinnamon

For the Cake mixture

5 eggs
1 cup sugar
1cup self-raising flour

Melt the butter and add it in the cake tin. Mix cinnamon and sugar together and spread then add the sliced apples on top and walnuts in the holes. In a bowl, beat well with mixer the eggs with sugar. Then gradually add the flour until it becomes a smooth batter. Pour the mixture on the cake and bake in preheated oven for 30 min at 180 degrees. Remove from the oven and let it cool a bit. Take a large plate or platter the size of the pan, and invert the apple pie.

Delicious Scones!

Scones is a new thing for me and is definetely not a Greek thing but I ended up loving them! Alex is pestering me  to make scones he loves to rub the butter into flour and use the cutter – they turned out well.  As you can see form the photo he can’t wait to eat another one.
